You can never have too many recipes and just when you start getting comfortable making one, someone in your household may tire of it – Hence it’s always good to have a string of recipes at the ready!

 

Here is a compilation of healthy recipes below that are great as add on’s, snacking on and literally does not take too much of your time, that’s why these ones have been selected!

Cooking is a skill that we should all have, it doesn’t need to be over the top or take so long, where would the fun be in that?

 

Cooking is so important to practice daily and allows you to avoid eating from packets, processed foods and too many refined foods. The purpose for many to eat home made foods is exactly that, to stay well, eat healthy and remain positive overall:)

 

All the recipes are gluten – free, keto friendly and vegetarian:)

 


Cheesy Broccoli Muffins

 

This recipe takes about 30 minutes to make and makes 6 muffins.

 

Ingredients:- 3 tbsp of butter, 2 large eggs, 1 cup of unsweetened almond milk or rice milk

 

1 cup of broccoli florets, finely chopped, 2 tbsp of nutritional yeast, 1 tbsp of baking powder

 

2 cups of almond flour or you can use coconut flour instead, but ensure to decrease the amount to half a cup.

 

1/2 spoon of salt.

 

These are so delicious and great for eating plain with tea or adding on some cream cheese with sliced tomatoes. You can even have a relishing snack when adding on top some chopped up peppers along with vinegar and a drizzle of olive oil:) Great for children and adults alike!

Coconut Cookies

 

An easy and quick recipe to rustle up in no time and can last for days… sweet, crunchy and wholesome with the use of coconut flour! Coconut flour is naturally free from gluten and gentle on the stomach, it is full of fibre for better digestion and light and fluffy for most of your baking needs and a great alternative to wheat flour!

 

This recipe takes around 30 minutes to make and bakes at least 10 cookies or more:)

 

Ingredients needed are 200g of butter, around 120ml of maple syrup, 1/4 spoon vanilla powder, 120g of coconut flour. You can add chopped pistachios or cocoa nibs as optional ingredients.

 

Instructions: – With a hand blender, blend the butter in a mixing bowl until thick and creamy. Add in the maple syrup and 1/4 spoon of vanilla powder for sweetness and blend well to the soft butter in the bowl.

 

Lastly, add in 120g of coconut flour to the bowl and keep blending until the batter is thick and you are able to pick up with your hand and shape into cookies. Once happy with the mixture, add in optional ingredients such as raisins and blend only until mixed with the mix.

 

Lay out a baking sheet of paper on a large 60cmX40cm tray and with your hand, grab a mixture of cookie mix and flatten until it is cookie shaped and place neatly on the baking tray.

 

The oven should be set to 170oC and bake for around 9 minutes and leave to set for up to an hour.

 

Vegetable Stir Fry

 

This recipe also takes about 30 minutes and serves four people.

 

Ingredients:- 1 whole chopped onion, some butter for frying, 1 finely chopped chili, gluten-free soy sauce, salt/black pepper, 800grams of vegetable stir fries and can include anything such as cabbage, mushrooms, sprouts, corn etc… of your choice! 3 nests of Rice noodles.

 

Instructions:- Fry an onion and chili with butter in a large pot until lightly brown. Next, pour in all the washed stir fry vegetables and cook until edible. Add in half a spoon of salt and 1/4 spoon of black pepper. Pour in the cooked rice noodles into the vegetables, along with 3 spoons of soy sauce carefully coating the noodles with it and mix well!

 

Very easy and simple to do and can be eaten as a quick lunch or for dinnertime while adding some steamed asparagus on the side with butter.

 

 


Bliss Balls

 

 

This recipe requires no baking or cooking and simply made by your hands and simply mixing up some ingredients – raw and fresh as eating wholesome from time to time definitely serves you well! These are delightful to add into a clear tall jar for all to see and can store in the fridge nicely to stay hardened and fresh for longer. A great alternative to ‘sugary’ treats found in many stores.

 

Conclusion

You see by using fresh whole ingredients has many benefits – as we all know. Eating from a box or ready meals often has an array of “toxic” ingredients that may contribute to health problems but eating less often helps too. The fewer ingredients, the better!

Check out online book stores such as Amazon or recipe apps that has hundreds recipes but be sure to go for the one that’s suitable for your needs.

 

These recipes are designed so that you can make them before you leave the house for later on or you can make anytime you feel ready, leave to the side and snack on throughout the next few days.
