! ALERT ! Recipe – Peanut Halva (contains nuts)

½ cup packed organic light brown sugar or Sucanat

6 tbsp unsweetened canned coconut cream

1 tsp pure vanilla extract

½ cup natural crunchy peanut butter (preferably unsalted)

¼ cup unsalted dry roasted peanuts

Be sure to have all the ingredients measured and ready on the counter before getting started. Place the sugar and

coconut cream in a medium saucepan. Bring to a boil on medium-high heat, stirring to dissolve the sugar crystals.

Continue to cook on medium heat, using a pastry brush to brush any sugar crystals from the sides of the saucepan.

Do not stir.

Cook until the bubbling mixture reaches 240°F on a candy thermometer. This will take about 8 to 10 minutes. Turn off the heat.

Then stir in the vanilla, followed by the peanut butter. Make sure each ingredient is fully incorporated. Fold the peanuts into the mixture with a rubber spatula.

Transfer the mixture to a small baking sheet lined with parchment paper, and evenly spread it into a 4-inch square.

 

Let cool completely before transferring to the refrigerator to further set for at least 2 hours or, even better,

overnight. Cut into small portions, and enjoy with a hot cup of tea or coffee. Leftovers can be stored in the refrigerator, wrapped tightly, for up to 2 weeks.

ALERT – Recipe – Triple C Truffles

3½ oz vegan dark chocolate, chopped

2 tbsp–¼ cup coconut cream (Use the lower amount if the

cream is thin. Use the larger amount if it is really thick.)

2 tsp pure maple syrup or agave nectar

⅛ tsp instant coffee powder

⅛ tsp chipotle powder

⅛ tsp ground cinnamon

Pinch coarse kosher salt

⅛ tsp pure vanilla extract

2 tbsp cacao nibs, crushed into coarse powder, more if needed

2 tbsp pistachio meal, more if needed

Line a plate with parchment paper or wax paper. Place the chocolate in a medium, heat-proof bowl.

Whisk to combine the cream, syrup, coffee powder, chipotle powder, cinnamon and salt in a small saucepan.

Heat on medium to dissolve the coffee powder and until heated through, about 2 minutes. Remove from the heat and

combine with the vanilla. Pour onto the chocolate and stir to melt. Leave at room temperature to thicken slightly,

for 45 minutes.

 

Scoop 1 tablespoon of the soft mixture for larger truffles, or 1½ teaspoons for smaller truffles, and spoon out onto

the paper. Repeat with the remaining mixture. You should get 8 large or 16 small truffles in all, but the yield might

vary slightly.

 

Refrigerate until firm, about 10 to 30 minutes depending on temperature. Shape the mixture into round truffles, and

coat half of the truffles by rolling into ground cacao nibs and the rest with pistachio meal, using a fork if needed.

Store in the refrigerator for up to 4 days, but be sure to serve at room temperature for the ultimate creaminess and flavor.
